This savoury salad includes lutein and zeaxanthin from dandelion greens and tomatoes, omega-3 from canola oil, and zinc from sundried tomato.

225g torn dandelion greens
1/2 red onion, chopped
2 tomatoes, chopped
3 tablespoons of canola oil
2 tablespoons of sundried tomato
1/2 teaspoon dried basil, or 1 tablespoon chopped fresh basil
salt and pepper to taste

Directions

In a medium bowl, toss together dandelion greens, red onion, tomatoes, sundried tomato and canola oil. Season with basil, salt, and pepper.
